Abstract

Regular thermal methods are useful in the investigation of non-stationary thermal processes in the systems "environment – solid (set of solids)" in order to determine the thermophysical parameters of solids.

The investigation of the system "water in a ring volume – a thin cylindrical metal wall –a complex liquid mixture in a cylindrical volume" in the conditions of non-stationary thermal processes for the possibility of realizing a regular thermal regime in the named system, with a complex mixture.

The research was carried out on an experimental installation (experimental stand), which consists of an outer metal vessel, which has a cylindrical shape, an inner metal cylindrical vessel and an insulated outside of the metal cover.

It was determined that the ratio for excess temperature ln (θ) = f (τ), which is characteristic for the regular thermal regime, is maintained on the investigated gap.

It has been experimentally established that regular thermal regime takes place as long as a complex multicomponent mixture (sour milk) does not begin to substantially restructure its structure, that is, the transition of this mixture into a two-phase system (serum + crude mass).
